Thanksgiving is just two days away now which means that by the time Saturday rolls around everyone will be sick of the dreaded leftovers! But wait, change things up a little this year...
Save any liquid you get when cooking your vegetables on Thursday, that includes the water you cook them in. This liquid can be used as a vegetable stock for the gravy, you can cook rice in it to add great flavor or you can freeze it to make soup at a later date. Another great option is to freeze it as cubes in little trays, you can then use them as individual flavor cubes in dishes for weeks to come.
Save your leftover vegetables and boil them down into mush with water and a little seasoning to make more stock that you can later use with the methods mentioned above.
Save all the inedible parts of the turkey - bones, ligaments, head, organs etc. They're great for cooking in water with a little seasoning to make stock for soup or freezing for later use. See a trend here!
Chop up the leftover turkey meat, add it to a large pot with some vegetables, seasoning and your saved liquid stock and make soup. Its great comfort food on cold days.
